-Supervising the process of transformation of tomato
-Performing quality control throughout the transformation process, from receiving the raw materials to the final product.
-Supervising the process of powdered preparations
-Performing quality control analysis
-Study of the effect of adding a pH corrector on the physicochemical and microbiological stability of HARISSA paste
-Understanding the different techniques of extraction of olive oil
